
My Mom's Chicken Noodle Soup
Ingredients:
8 c. water
2 chicken breasts (it's easier if they are boneless/skinless)
2 bouillon eggs from a Mrs. Grass chicken noodle soup box
1 package of seasoning from a Mrs. Grass chicken noodle soup box
1-2 carrots
1-2 stalks of celery
1 bag/box of noodles (preferably medium shells) (dumplings are pictured)
salt
pepper
Directions:
(1) Bring a pot of water to a boil. Reduce to simmer.
(2) Place the chicken into the water and gently simmer until cooked through.
(3) Remove chicken. Let cool. Add bouillon eggs, seasoning packet, carrots, celery, salt, and pepper to simmering water.
(4) Chop chicken to preferred size and return it to the pot.
(5) Add noodles once the carrots and celery are cooked through. Follow directions on the pasta box for cooking time. Since the pasta will continue to cook after it is done, either stop the cooking process early (while the pasta is still al dente), or add ice and put it into the fridge immediately (if you are eating some of it on another day).
